The split Canadian (MBG#414) is produced from a full pork loin. The shoulder end, sirloin end and belly strap are removed and the surface fat trimmed to 1/4 inch. The boneless loin is split, seasoned and vacuum packed for freshness, each piece possessing individual vacuum integrity.

Seasoned roasts have been developed to provide the customer with a more flavorful and juicer product than non-seasoned roasts. It is recommended that seasoned roasts be cooked at 500°F for the first 30 minutes, then reduce the heat to 350°F until the roast is fully cooked to an internal temperature of 175°F. Seasoned roasts need no further seasoning. However, additional seasoning may be added during cooking.
Chef's Prime Filet with Honey-Mustard Cream

2 Tbsp. Dijon-style mustard |
1/4 tsp. hot pepper sauce |

1/4 cup heavy cream |
Stir together the honey, mustard and hot pepper sauce. Place chops on rack of broiler pan; brush with mustard glaze; sprinkle lightly with pepper. Broil four inches from heat for 4 minutes. Turn over and brush again with glaze; broil 4 minutes more or until done (slightly pink in center). Whip cream until stiff. Fold in 2 tablespoons of the mustard glaze. Serve mustard cream with the chops. Serves 4.
